
Ingredients:
3/4 cup creamy peanut butter
1/4 cup dairy free margarine
1/2 teaspoon vanilla
2 cup powered sugar, sifted
6 ounces semisweet chocolate
1 tablespoon shortening
Directions:
Cream the peanut butter, margarine, and vanilla with a mixer. Once combined, slowly add the sugar and continue mixing.
Be sure to scrape down the bowl with a spatula during the mixing process.
Roll the dough into balls, put a toothpick in the middle of the ball, and then refridgerate for at least 30 minutes.
Once the balls are chilled they are ready to be dipped.
Melt the chocolate with the shortening and mix together.
Then dip the peanut butter balls into the chocolate, about 3/4 of the way, so the chocolate looks like the outside of a buckeye.
Place on parchment paper and allow the chocolate to set up.
